Malvani chicken curry served with crispy deep-fried vade (puffed rice flour bread) — the celebration preparation of the Konkan coast.
Make Malvani masala paste: dry-roast coconut very dark, onion until charred, all whole spices.
Blend with chillies and Malvani masala to a thick paste.
Heat 2 tbsp oil. Add onion. Cook deep golden.
Add chicken pieces. Brown 6 minutes. Add masala paste.
Fry stirring 5 minutes. Add kokum and 1 cup water. Simmer covered 30 to 35 minutes until tender. Season with salt.
Make vade dough: combine rice flour, urad dal flour, asafoetida, cumin and salt.
Add hot water and knead with wet hands into a soft dough.
Divide into 8 balls. Pat into thin rounds 10 cm wide.
Fry vade on medium in deep oil 2 minutes per side until puffed and golden.
