Mumbai's beloved mashed vegetable curry served on butter-toasted soft buns — street food gold.
The original Bhuj-Kutch preparation of dabeli with the specific Kutchi variation — potato filling with a more pronounced sweet-tangy character using tamarind-date chutney rather than just tamarind, and with a specific regional dabeli masala that uses dried coconut and fennel.
Make the tamarind-date chutney: Blend soaked tamarind pulp, 3 pitted dates, jaggery, salt and a pinch of red chilli to a smooth, thick, sweet-sour chutney. This more complex chutney is specifically the Kutchi variation.
Make the Kutchi dabeli masala: If making from scratch — lightly toast dry grated coconut and fennel seeds separately. Grind with coriander, cinnamon, clove, red chilli to a fragrant powder.
Make the filling: Heat 2 tbsp oil. Add the dabeli masala powder and toasted dry coconut — stir on low heat 30 seconds. Add mashed potato. Mix well. Add tamarind-date chutney, sugar and salt. The Kutchi filling should have a more pronounced sweet-tangy note than other versions.
Toast the rolls: Split the soft rolls. Spread butter on the cut surfaces. Toast on a hot griddle until golden.
Apply chutneys to toasted rolls: Spread green chutney on one cut side and tamarind-date chutney on the other.
Fill with potato mixture: Place a generous spoonful of filling inside each roll.
Add toppings inside: Add pomegranate seeds, crushed peanuts and toasted fresh coconut inside the roll.
Press firmly: Press the assembled dabeli between palms.
Roll edges in sev: Roll the sides in thin sev which sticks to the chutney-moistened exterior.
Serve immediately.
Note: The original Bhuj dabeli has a more pronounced sweet character in its filling than the Mumbai or Pune versions — the tamarind-date chutney replaces the simple tamarind chutney used elsewhere. The addition of freshly toasted coconut inside the filling (not just as a garnish) is also specifically Kutchi.
