Puffed rice tossed with mustard oil, raw onion, green chilli, tomato, boiled potato, roasted peanuts, bhujia sev and a mixture of ground spices — the defining Kolkata street snack mixed on the spot in a large metal bowl and served in paper cones by the jhalmuri wallahs of every street corner.
Place the puffed rice in a wide bowl: The puffed rice must be very crispy and fresh — stale puffed rice makes limp jhalmuri.
Add the spice mix: Sprinkle the combined spice mix (cumin, black salt, red chilli, chaat masala) over the puffed rice. Toss.
Add raw mustard oil: Drizzle 1 tbsp raw mustard oil over the puffed rice. Toss immediately. The raw mustard oil distributes through the puffed rice within 30 seconds — this pungent, raw mustard oil flavour is non-negotiable in authentic Kolkata jhalmuri.
Add boiled potato: Add the tiny boiled potato cubes. Toss.
Add raw vegetables: Add chopped onion, chopped tomato and green chilli. Toss.
Add tamarind paste: Add tamarind paste. Toss — the tamarind provides the sweet-sour note.
Add lime juice: Squeeze lime generously over all. Toss.
Add peanuts: Add roasted peanuts. Toss.
Add sev last: Add the bhujia sev last — it softens very quickly and must be added at the last moment before serving.
Scatter coriander and serve in paper cones immediately: The entire preparation must happen in 60 seconds and be eaten within 2 minutes — the puffed rice softens rapidly.
Note: Jhal Muri (jhal = spicy, muri = puffed rice in Bengali) is the ubiquitous street snack of Kolkata — the jhalmuri wallahs (vendors) carry a large metal bowl in one hand and mix portions to order using a deft, experienced tossing technique. The raw mustard oil is the defining ingredient — its sharp, pungent character sets Kolkata jhalmuri apart from all other puffed rice preparations in India. The jhalmuri sellers of Victoria Memorial, the Maidan, Howrah Bridge approaches and every Kolkata park are a specific social institution.
