Aloo Paratha
Stuffed whole-wheat flatbread with spiced potato filling — the quintessential Punjabi...
Classic Karnataka — chow chow bath made with kesari bath and khara bath combo.
Make kesari bath: Dry roast 1 cup semolina. Make sugar syrup with 1 cup water and half cup sugar. Add semolina, ghee, saffron and cardamom to make a sweet kesari bath.
Make khara bath: Dry roast 1 cup semolina. Make a savoury upma with tempering, onion, green chilli, ginger, vegetables and water.
Serve together: This dish serves BOTH preparations together on the same plate — one sweet and one savoury.
Plate kesari bath first: Place a round of hot sweet orange kesari bath on one side of the plate.
Plate khara bath: Place hot savoury khara bath on the other side of the same plate.
Keep them separate on the plate: The two should be placed side by side but not mixed — the contrast is what makes chow chow bath special.
Add chutneys: Serve with coconut chutney on the side.
Add a banana: Traditionally a ripe banana is served alongside.
Garnish: Top each with a small tsp of ghee.
Serve: Chow chow bath is Bengaluru's iconic breakfast — sweet and savoury on the same plate. Eat them separately or mix a little together as you prefer.
