Aloo Posto Bengali Potato Poppy

Diced potato cooked with a paste of white poppy seeds and green chilli in mustard oil. The most characteristic dish of Bengali vegetarian cooking — creamy, mildly spiced and uniquely flavoured by the poppy seed paste.

Method

    Soak the poppy seeds: Place 4 tbsp white poppy seeds in a small bowl. Cover with 3 tbsp water. Soak for 20 minutes. Soaking softens the seeds and makes grinding easier.

    Grind the poppy paste: Drain any excess water from the soaked poppy seeds. Place the soaked seeds in a small mixer jar with 2 green chilli and a pinch of salt. Add 2 tbsp fresh water. Grind for 2 to 3 minutes until a thick, smooth creamy-white paste forms. The paste should be very fine — no gritty texture. This posto paste is the heart of the dish.

    Heat mustard oil: Place a pan on high heat. Add 3 tbsp mustard oil. Heat until smoking. Reduce to medium. This removes the pungency of the mustard oil — an essential step in Bengali cooking.

    Temper with nigella seeds: Add 1/4 tsp nigella seeds to the hot oil. They will crackle in 10 seconds. Stir briefly.

    Add potato and turmeric: Add the cubed potato pieces. Sprinkle 1/2 tsp turmeric over the potato. Stir well to coat all the pieces with the yellow turmeric. Cook on medium heat for 3 minutes, stirring occasionally, until the potato edges turn slightly golden.

    Add the poppy paste: Add the ground poppy seed paste to the potato. Stir immediately to coat every piece of potato with the creamy paste.

    Add water and salt: Add 2 tbsp water. Add salt. Stir gently. Add the slit green chilli.

    Cover and cook on low heat: Reduce heat to low. Cover the pan. Cook for 10 minutes. The potato will cook in the steam generated by the little water and its own moisture. Open and check once — if it looks dry, add 1 tbsp more water.

    Final stir and sugar: Open the lid. The potato should be fully cooked — test by pressing a piece with a spoon, it should break easily. Add a tiny pinch of sugar. Stir once more. The sugar is a Bengali finishing touch that brings balance.

    Serve: Serve aloo posto with steamed white rice and a drizzle of 1 tsp raw mustard oil on top — the raw oil finish is traditional and enhances the flavour. Also delicious with luchi (puffed fried bread).

    Note: Aloo Posto is considered the most distinctively Bengali dish in the vegetarian repertoire — no other regional cuisine uses poppy seeds this extensively. Posto (poppy seeds) appear in many Bengali dishes — with pointed gourd, ridge gourd and egg. The creamy white poppy paste gives a uniquely mild, nutty flavour that cannot be replicated with any other ingredient. On Saraswati Puja (the festival of education), Bengalis traditionally eat aloo posto and other vegetarian dishes.
