Gulab Jamun
Soft milk-solid dumplings soaked in fragrant rose sugar syrup — India's most beloved sweet.
Roasted sesame seeds bound with melted jaggery and shaped into compact balls — a warming, iron-dense winter sweet of Uttarakhand made for Makar Sankranti.
Dry-roast sesame seeds in a pan on medium heat, stirring constantly, for 3 to 4 minutes until they pop and smell nutty.
They should be lightly golden — not dark or bitter.
Transfer immediately to a plate.
In a small heavy pan combine grated jaggery and 1 tbsp water.
Heat on low-medium, stirring, until jaggery completely dissolves and forms a smooth syrup.
Test: drop a small amount into cold water — it should form a soft pliable ball.
Add all the roasted sesame seeds and cardamom powder to the syrup. Mix quickly with a spoon.
Apply ghee to your palms. Working quickly before the mixture sets, take 2 tbsp and press firmly between greased palms.
Roll into a compact round ball. Continue shaping all the mixture.
If it hardens before you finish, briefly warm the pan on very low heat for 30 seconds to soften.
Place shaped ladoos on a plate. Cool completely for 15 minutes until firm.
Store in an airtight container for up to 2 weeks.
