Method

    Dry roast cashews: Dry roast raw cashews in a heavy pan on medium-low heat for 3 to 4 minutes, stirring, until golden-brown and fragrant. The dry roasting adds a depth that raw cashews cannot provide.

    Dry roast red chilli: Roast dried red chilli in the same pan for 30 seconds until slightly darkened.

    Cool: Allow both to cool completely before grinding.

    Dry grind first: Grind the roasted cashews, dried red chilli, garlic cloves, turmeric and salt together for 30 seconds to a coarse powder — without adding water yet.

    Add tamarind: Add tamarind paste and 2 tbsp water. Grind to a thick, coarse-medium paste. The chutney should be thick and slightly textured — not smooth.

    Taste: Adjust salt, tamarind and chilli to taste.

    Make the tempering: Heat 2 tbsp sesame oil. Add mustard seeds — pop. Add curry leaves — crackle.

    Pour tempering over chutney: Pour the hot sesame oil-mustard-curry leaf tempering over the ground cashew chutney.

    Stir through: Mix the tempering through the chutney.

    Serve: Serve as a dip, as a condiment alongside steamed rice, or as an accompaniment to idli and dosa.

    Note: Jeedipappu Pachadi (jeedipappu = cashew in Telugu, pachadi = chutney/condiment) uses Telangana's significant cashew production — the state produces cashews commercially in the Nalgonda and Khammam districts. The dry-roasted cashew chutney is a thicker, more intensely flavoured condiment than the fresh coconut chutneys of Tamil Nadu and Kerala — the dry roasting creates a depth that raw cashews cannot provide. Served specifically as a rice accompaniment in southern Telangana households.
