Gulab Jamun
Soft milk-solid dumplings soaked in fragrant rose sugar syrup — India's most beloved sweet.
Deep-fried bread soaked in a saffron-flavoured sugar syrup and topped with reduced milk (rabri) and nuts — the Hyderabadi bread pudding of the Nizam's kitchen.
Make rabri: boil milk in a heavy pan. Cook on medium stirring every 5 minutes for 25 to 30 minutes until reduced to 1/3 volume.
Add sugar. Cook 3 more minutes. Cool.
Make syrup: dissolve sugar in water. Boil 5 minutes until slightly thickened.
Add cardamom and saffron water. Keep warm.
Deep fry bread triangles on medium in oil or ghee until deep golden on both sides — 2 minutes per side. Drain on paper towels.
While still hot, dip each fried bread triangle in the warm sugar syrup for 30 to 45 seconds. Arrange in a serving dish.
Pour remaining syrup over the bread. Let absorb 5 minutes.
Spread the rabri over the top.
Garnish with sliced pistachios, almonds and silver leaf.
