    About Sattu Nimbu Paani: Sattu Nimbu Paani is the great workingman's drink of Bihar — a glass of cold sattu water with lemon, ginger and black salt that delivers protein, electrolytes and cooling all at once. Drunk by farm workers, students, office-goers and street vendors throughout the brutal Bihari summer, it is the original Indian sports drink, dating back centuries.

    Choose fresh sattu: Use 3 tbsp of fresh roasted gram flour (chana sattu). The colour should be golden tan and the smell deeply nutty when you open the packet. Stale sattu develops a sour or rancid edge — discard if it smells off.

    Use properly cold water: Use 2 cups of well-chilled drinking water. Sattu drinks must be cold; warm or room-temperature sattu paani tastes flat and slightly heavy in the stomach. If your fridge water is not cold enough, add 2-3 ice cubes to chill the water further before using.

    Measure the sattu correctly: Use a level tablespoon measure, not heaping. Three level tablespoons gives the right balance — too much and the drink turns thick and sludgy; too little and it tastes thin.

    Whisk in a wide jug: Pour the cold water into a wide-mouthed jug or large bowl — wider is better than taller because it gives you room to whisk without splashing. Sprinkle the sattu over the water (not the other way around — adding water to sattu produces lumps).

    Whisk to dissolve: Use a wire whisk or fork to whisk vigorously for 1 full minute. Sattu has a tendency to clump, so keep whisking until the mixture is completely smooth and a uniform pale tan colour with no lumps. Inspect by tilting the jug — any visible clumps need more whisking.

    Let it rest briefly: Set the whisked sattu water aside for 1 minute. This rest lets any tiny remaining clumps dissolve fully and the mixture to settle into an even consistency.

    Prepare the ginger juice: Take a 1 inch piece of fresh ginger. Peel and grate finely. Place the gratings in your fist over a small bowl and squeeze hard to extract the juice. You should get about 1/2 tsp of clear ginger juice. Discard the squeezed pulp.

    Understand black salt: Black salt (kala namak) is essential for authentic Bihari sattu paani. It has a distinctive sulphurous, slightly smoky tang that ordinary salt cannot replicate. It is sold at all Indian grocery stores and is dark pink-grey, despite the misleading name.

    Add the seasonings: To the smooth sattu water add the juice of 1 fresh lemon (about 2 tbsp), the 1/2 tsp ginger juice, 1/2 tsp black salt and 1 tsp sugar. Sugar is optional and traditional — many Biharis prefer their sattu paani without any sugar at all, just the salt and lemon.

    Whisk again: Whisk for 30 more seconds until the salt and sugar fully dissolve. The drink will take on a slightly frothy top and a beautiful pale beige colour.

    Taste and adjust: Dip a clean spoon and taste. The drink should hit you in three waves — nutty from the sattu, tangy-fresh from the lemon and ginger, and gently salty. Adjust lemon, salt or sugar to your liking. If it tastes too thick, add 1/4 cup more cold water.

    Prepare the glass: Take a tall glass. Drop in 3-4 ice cubes. Tall glasses with ice are essential — sattu paani is meant to be a long, cooling drink, not a quick shot.

    Pour and serve: Stir the sattu paani once just before pouring — the sattu settles to the bottom of the jug if it sits more than a few minutes. Pour into the iced glasses. Garnish each with a fresh mint leaf or a lemon wedge if you like. Drink slowly, stirring occasionally with a long spoon, as the sattu does continue to settle in the glass. Best enjoyed immediately while ice-cold and frothy.
