Method

    Prepare moringa leaves: Wash fresh murunga elai (moringa / drumstick) leaves thoroughly. Strip the tiny leaves from the thin stems.

    Make dosa batter: Mix 2 cups rice flour with half cup whole wheat flour, salt and enough water to make a thin, pourable batter.

    Add moringa leaves: Stir the fresh moringa leaves directly into the dosa batter. Mix well.

    Add aromatics: Mix in 1 finely chopped onion, 2 green chillies and 1 tsp cumin seeds.

    Rest batter: Let batter rest 15 minutes.

    Heat tawa: Heat a flat tawa on medium-high heat. Oil the tawa.

    Pour batter: Pour a ladle and spread into a thin round — the dosa will be speckled green from the moringa leaves.

    Add oil: Drizzle half tsp oil around the edges.

    Cook both sides: Cook on medium heat 2-3 minutes until golden. Flip and cook 1-2 minutes.
