Tribal/village Tamil Nadu recipe — Moringa leaf dosa — a bright green iron-rich village dosa.

  1. Prepare moringa leaves: Wash fresh murunga elai (moringa / drumstick) leaves thoroughly. Strip the tiny leaves from the thin stems.
  2. Make dosa batter: Mix 2 cups rice flour with half cup whole wheat flour, salt and enough water to make a thin, pourable batter.
  3. Add moringa leaves: Stir the fresh moringa leaves directly into the dosa batter. Mix well.
  4. Add aromatics: Mix in 1 finely chopped onion, 2 green chillies and 1 tsp cumin seeds.
  5. Rest batter: Let batter rest 15 minutes.
  6. Heat tawa: Heat a flat tawa on medium-high heat. Oil the tawa.
  7. Pour batter: Pour a ladle and spread into a thin round — the dosa will be speckled green from the moringa leaves.
  8. Add oil: Drizzle half tsp oil around the edges.
  9. Cook both sides: Cook on medium heat 2-3 minutes until golden. Flip and cook 1-2 minutes.
  10. Serve: Murunga elai dosai is highly nutritious with a distinctive earthy flavour. Serve with coconut chutney.
