Tribal/village Tamil Nadu recipe — Moringa leaf dosa — a bright green iron-rich village dosa.
Ingredients
- - moringa leaf dosa as main ingredient
- - Minimal oil (sesame or coconut)
- - Salt to taste
- - Basic tempering — mustard, curry leaves
- - Coconut or tamarind if required
Method
- Prepare moringa leaves: Wash fresh murunga elai (moringa / drumstick) leaves thoroughly. Strip the tiny leaves from the thin stems.
- Make dosa batter: Mix 2 cups rice flour with half cup whole wheat flour, salt and enough water to make a thin, pourable batter.
- Add moringa leaves: Stir the fresh moringa leaves directly into the dosa batter. Mix well.
- Add aromatics: Mix in 1 finely chopped onion, 2 green chillies and 1 tsp cumin seeds.
- Rest batter: Let batter rest 15 minutes.
- Heat tawa: Heat a flat tawa on medium-high heat. Oil the tawa.
- Pour batter: Pour a ladle and spread into a thin round — the dosa will be speckled green from the moringa leaves.
- Add oil: Drizzle half tsp oil around the edges.
- Cook both sides: Cook on medium heat 2-3 minutes until golden. Flip and cook 1-2 minutes.
- Serve: Murunga elai dosai is highly nutritious with a distinctive earthy flavour. Serve with coconut chutney.
