Pork liver stir-fried quickly with onion, ginger and green chilli — the Mizo whole-animal preparation of liver that preserves its natural flavour.
Clean pork liver: trim any discoloured parts and bile ducts.
Slice into 1.5 cm thick pieces.
Heat 1 tbsp oil in a wide pan on medium-high.
Add thinly sliced onion. Cook on medium-high stirring for 4 minutes until softened and starting to colour.
Add sliced garlic and grated ginger. Stir 30 seconds. Add slit green chillies.
Add liver slices in a single layer. Fry on medium-high for 2 minutes without moving — let them develop colour on the bottom.
Add turmeric. Flip the liver pieces. Cook 2 minutes more.
Add soy sauce. Toss. Cook 1 more minute.
Test doneness: cut one piece — it should be cooked throughout with no pink remaining but should not be overcooked and dry.
Liver cooks very fast — overcooked liver becomes tough.
Season with salt. Garnish with spring onion. Serve with steamed rice.
