Pork liver stir-fried quickly with onion, ginger and green chilli — the Mizo whole-animal preparation of liver that preserves its natural flavour.

  1. Clean pork liver: trim any discoloured parts and bile ducts.
  2. Slice into 1.5 cm thick pieces.
  3. Heat 1 tbsp oil in a wide pan on medium-high.
  4. Add thinly sliced onion. Cook on medium-high stirring for 4 minutes until softened and starting to colour.
  5. Add sliced garlic and grated ginger. Stir 30 seconds. Add slit green chillies.
  6. Add liver slices in a single layer. Fry on medium-high for 2 minutes without moving — let them develop colour on the bottom.
  7. Add turmeric. Flip the liver pieces. Cook 2 minutes more.
  8. Add soy sauce. Toss. Cook 1 more minute.
  9. Test doneness: cut one piece — it should be cooked throughout with no pink remaining but should not be overcooked and dry.
  10. Liver cooks very fast — overcooked liver becomes tough.
  11. Season with salt. Garnish with spring onion. Serve with steamed rice.
