Pork liver stir-fried quickly with onion, ginger and green chilli — the Mizo whole-animal preparation of liver that preserves its natural flavour.
Ingredients
- 400g pork liver — cleaned and cut into 1.5 cm slices
- 1 medium onion — thinly sliced
- 3 garlic cloves — sliced
- 1 tsp ginger — grated
- 2 green chillies — slit
- 1/4 tsp turmeric
- 1 tsp soy sauce
- 1 tbsp oil
- Salt to taste
- Spring onion to garnish
Method
- Clean pork liver: trim any discoloured parts and bile ducts.
- Slice into 1.5 cm thick pieces.
- Heat 1 tbsp oil in a wide pan on medium-high.
- Add thinly sliced onion. Cook on medium-high stirring for 4 minutes until softened and starting to colour.
- Add sliced garlic and grated ginger. Stir 30 seconds. Add slit green chillies.
- Add liver slices in a single layer. Fry on medium-high for 2 minutes without moving — let them develop colour on the bottom.
- Add turmeric. Flip the liver pieces. Cook 2 minutes more.
- Add soy sauce. Toss. Cook 1 more minute.
- Test doneness: cut one piece — it should be cooked throughout with no pink remaining but should not be overcooked and dry.
- Liver cooks very fast — overcooked liver becomes tough.
- Season with salt. Garnish with spring onion. Serve with steamed rice.
