Method

    Place beef pieces in a heavy pot with 3 cups cold water.

    Bring to a boil. Skim all white foam from the surface thoroughly — this is essential for a clean clear broth.

    Add crushed garlic, sliced ginger, slit green chillies, lemongrass if using, turmeric and salt.

    Reduce to medium-low. Cover and simmer for 45 to 55 minutes until beef is completely tender. A knife or chopstick should slide through a piece with no resistance.

    In the last 10 minutes remove the lid and increase heat slightly to concentrate the broth.

    Taste and adjust salt. The broth should be clear, deeply savoury and fragrant from ginger, garlic and lemongrass.

    Garnish with spring onion and coriander. Serve with steamed rice, the beef pieces and the broth poured generously over everything.
