Ilish Macher Paturi Hilsa Banana Leaf Bengali

Fresh hilsa fish marinated in mustard paste and wrapped in banana leaf then cooked on a griddle until the leaf chars and the fish steams inside. One of the most prized preparations of Bengal that can only be made when fresh hilsa is available.

Method

    Soak mustard and poppy seeds: Soak yellow mustard seeds and white poppy seeds separately in water for 20 minutes.

    Grind the paste: Drain both soaked seeds. Grind together in a mixer with green chilli, turmeric and salt. Add 2 tbsp mustard oil and 3 tbsp water. Grind for 3 minutes to a very smooth, silky paste.

    Prepare the banana leaves: Pass each banana leaf piece slowly over a medium gas flame for 5 to 8 seconds on each side — the leaf will soften and become pliable without burning. Alternatively soak in hot water for 1 minute.

    Coat the fish: Place each hilsa steak in the centre of a softened banana leaf. Coat generously with the mustard-poppy paste — top, sides and underneath. Drizzle 1/4 tsp raw mustard oil over the paste.

    Wrap the banana leaf: Fold the near side of the leaf over the fish. Fold the far side. Fold both open sides underneath. Secure with a toothpick. Make all 4 parcels.

    Heat a griddle: Heat a flat griddle or cast iron pan on medium heat.

    Cook the parcels: Place the sealed banana leaf parcels on the griddle. Cook for 6 to 8 minutes on one side — the leaf will darken and char in patches. Flip and cook the other side for 6 to 8 minutes.

    Test doneness: After 12 to 15 minutes total, carefully open one parcel. The fish should be fully opaque and flake when pressed. If translucent, reseal and cook 3 more minutes.

    Serve in the leaf: Bring the sealed parcels to the table. Let each guest open their own — the fragrant steam escaping from the opened leaf is part of the experience.

    Eat with steamed rice: Serve alongside plain steamed white rice. The mustard paste sauce that has condensed inside the leaf is spooned over the rice.
