Method

    Prepare the prawns: Shell and devein the prawns — to devein, make a shallow cut along the back and remove the dark vein. Wash thoroughly. Marinate with 1/2 tsp turmeric and salt. Prawns need minimal marination time — 5 minutes is enough.

    Lightly fry the prawns: Heat mustard oil in a wide pan until smoking, then reduce to medium. Fry the marinated prawns for 1 minute on each side — just until they turn pink and slightly firm. Do not fully cook them at this stage. Remove and keep aside. Prawns cook very quickly and will finish in the sauce.

    Temper and cook onion: In the remaining oil add nigella seeds. Stir 10 seconds. Add the finely chopped or grated onion. Cook on medium heat for 8 minutes until translucent and lightly golden.

    Add ginger and garlic: Add ginger paste and garlic paste. Stir for 2 minutes until raw smell disappears.

    Add spice powders: Turn heat to low. Add red chilli powder and cumin powder. Stir 1 minute on low heat. Add 1/2 tsp sugar — the sugar is characteristic of Bengali cooking and creates a subtle balance.

    Add coconut milk carefully: Reduce heat to the lowest setting. Pour the coconut milk slowly into the pan while stirring gently. Add 1/4 cup water. Add salt. Stir to combine everything. Do not boil coconut milk on high heat — it can separate. Keep the heat gentle.

    Simmer the coconut gravy: Cook on very low heat, stirring occasionally, for 5 minutes until the coconut milk gravy becomes slightly thickened and the raw coconut smell disappears. The gravy will be creamy and pale.

    Add the prawns: Add the lightly fried prawns to the coconut gravy. Add the slit green chillies. Stir gently to coat the prawns.

    Final cook: Cover and cook on low heat for 4 to 5 minutes. Prawns cook very fast — overcooking makes them rubbery. Remove from heat when the prawns are just cooked through and curled into a C shape.

    Garnish and serve: Scatter coriander leaves on top. Serve hot with steamed white rice. The coconut gravy should be gently spooned over the rice.

    Note: Chingri Malaikari is considered one of the most refined dishes in Bengali cuisine. The name malaikari is believed to come from the word malay (coconut in Bengali) referring to the coconut milk, or possibly from Malay (the Southeast Asian influence on coastal trade routes). It is prepared for Durga Puja, weddings and special occasions. In coastal districts of West Bengal where large river prawns (bagda chingri) are found, this dish reaches its finest expression.
