Pearl millet cooked with split moong dal into a thick, warming khichdi — the winter preparation of the Banaskantha district of north Gujarat, India's largest milk cooperative (Amul) country, where bajra and dairy are both abundantly available. Served with a generous dollop of white butter.
Soak the bajra: If using whole bajra, soak in water 1 hour. If using coarsely cracked bajra, 30 minutes is sufficient.
Pressure cook together: Drain soaked bajra and moong dal. Place together in pressure cooker with 5 cups water, turmeric. Cook on high until first whistle, then medium for 6 to 7 whistles. The bajra takes longer to fully soften than rice — it must be completely tender.
Check consistency: Open the cooker. The bajra and moong dal should be unified into a thick, creamy porridge. If too thick, add hot water and stir.
Heat ghee: Heat 3 tbsp ghee in a small pan. Add cumin seeds — crackle. Add asafoetida.
Add ginger: Add ginger paste. Cook 30 seconds.
Pour tempering: Pour the ghee tempering into the bajra-moong khichdi. Stir.
Add salt: Add salt. Stir.
Simmer 3 minutes: Cook together briefly.
Check: The khichdi should be thick, fragrant with ghee and have the earthy, slightly nutty character of bajra. It will thicken considerably as it cools.
Serve hot: Serve in deep bowls with a large knob of white butter on top and a small bowl of thick yogurt. The white butter melts into the hot khichdi.
Note: Banaskantha district in north Gujarat is the heartland of the Amul dairy cooperative — the district's milk production contributes significantly to the cooperative that revolutionised India's dairy industry through Operation Flood. The bajra khichdi is the practical winter meal of Banaskantha's farming communities who manage both bajra fields and dairy cattle. The white butter (safed makhan) — made from the locally abundant buffalo milk — is the essential accompaniment that differentiates this preparation from a simple khichdi.
