Pav Bhaji
Mumbai's beloved mashed vegetable curry served on butter-toasted soft buns — street food gold.
Fresh tomatoes cooked in a sour, spiced preparation and served as a chaat — the unusual Varanasi street food where tomato is the hero of the chaat.
Heat 1 tbsp oil in a pan. Add cumin — sizzle. Add asafoetida.
Add very finely chopped onion. Cook on medium for 4 minutes until softened.
Add finely chopped tomatoes and green chillies.
Cook on medium for 6 to 7 minutes until tomatoes break down to a thick, saucy consistency.
Add red chilli powder, coriander powder and garam masala. Stir.
Add tamarind paste and sugar. Cook 2 more minutes.
Season with salt. The tamatar chaat should be tangy, spiced and thick.
Serve in small bowls or on small crispy puri shells.
Top with fine sev, fresh coriander, thin slices of fresh ginger and a squeeze of lemon.
