Fresh tomatoes cooked in a sour, spiced preparation and served as a chaat — the unusual Varanasi street food where tomato is the hero of the chaat.
Ingredients
- 500g ripe tomatoes — finely chopped
- 1 medium onion — very finely chopped
- 2 green chillies — finely chopped
- 1 tbsp oil
- 1 tsp cumin seeds
- 1/4 tsp asafoetida
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- 1/4 tsp garam masala
- 1 tbsp tamarind paste
- 1/2 tsp sugar
- Salt
- For topping: sev, fresh coriander, sliced ginger, lemon
Method
- Heat 1 tbsp oil in a pan. Add cumin — sizzle. Add asafoetida.
- Add very finely chopped onion. Cook on medium for 4 minutes until softened.
- Add finely chopped tomatoes and green chillies.
- Cook on medium for 6 to 7 minutes until tomatoes break down to a thick, saucy consistency.
- Add red chilli powder, coriander powder and garam masala. Stir.
- Add tamarind paste and sugar. Cook 2 more minutes.
- Season with salt. The tamatar chaat should be tangy, spiced and thick.
- Serve in small bowls or on small crispy puri shells.
- Top with fine sev, fresh coriander, thin slices of fresh ginger and a squeeze of lemon.
