Classic Andhra/Telangana — bamboo rice with lentils.
Prepare bamboo rice: Bamboo rice (moongil arisi) is rice harvested from bamboo seeds. Wash 1.5 cups bamboo rice thoroughly under running water.
Soak: Soak bamboo rice in cold water for 1 hour. Drain.
Make khichdi base: Heat 2 tbsp ghee in a pressure cooker. Add 1 tsp cumin seeds and a bay leaf.
Add onion: Add 1 finely chopped onion. Cook 5 minutes until soft.
Add ginger-garlic and green chilli: Add 1 tsp ginger-garlic paste and 2 slit green chillies. Fry 1 minute.
Add moong dal: Add half cup washed moong dal. Stir with the bamboo rice.
Add drained bamboo rice: Add drained bamboo rice. Toss gently with the dal and onion.
Add water: Add 3 cups warm water and salt. Stir well and bring to a boil.
Pressure cook: Cover and cook for 3-4 whistles until rice and dal are completely soft.
Serve: Open cooker and add 2 tbsp ghee. Mix well. Bamboo rice khichdi should be soft and comforting. Serve with pickle and papad.
