UP Besan Laddoo Gram Flour Sweet Festive

Gram flour roasted in generous ghee until deep golden then mixed with powdered sugar and shaped into round balls — the most universally made festival sweet across Uttar Pradesh, made for Diwali, Holi and all family celebrations. The depth of colour and flavour depends entirely on how thoroughly the gram flour is roasted.

Method

    Heat ghee: Heat 3/4 cup ghee in a wide, heavy pan on medium-low heat. The pan must be heavy — thin pans cause the gram flour to burn unevenly.

    Add gram flour: Add gram flour to the hot ghee. Stir immediately and continuously.

    Roast on medium-low heat: This is the critical step. Roast the gram flour in the ghee, stirring without stopping, for 15 to 18 minutes on medium-low heat. The colour progression: pale yellow → golden → deep golden → deep hazelnut brown. Stop at deep golden — just before the hazelnut stage. The whole room should smell of deeply roasted gram flour and hot ghee.

    Fry cashews: Add cashews in the last 3 minutes. They turn golden alongside the gram flour.

    Remove from heat: Take completely off the heat. The gram flour continues to cook in the residual heat of the ghee.

    Add raisins: Add raisins. Stir.

    Cool slightly: Cool for 5 minutes until the mixture is warm but not hot. The mixture will seem too loose when hot — it firms significantly as it cools.

    Add powdered sugar: Add powdered sugar and cardamom. Mix vigorously for 2 minutes until fully incorporated.

    Shape while warm: Work quickly while the mixture is still warm. Take 2 tablespoons of the mixture. Press firmly between palms and roll into a smooth, compact ball. If the mixture crumbles, the sugar or ghee was insufficient — add 1 tsp more ghee and try again.

    Cool completely: Place on a plate. Cool at room temperature until firm. Store in an airtight tin for up to 2 weeks.

    Note: Besan Laddoo is the single most universally made sweet across the Hindi belt — every household in UP makes large batches before Diwali to distribute to neighbours and relatives. The key determinant of quality is the depth of roasting — under-roasted gram flour produces a pale, slightly raw-tasting laddoo, while properly roasted gram flour creates a deeply nutty, caramelised sweetness. Most commercial laddoo is under-roasted. The traditional UP way is to roast until the colour is deeply golden.
