Method

    Prepare fenugreek leaves: Wash fenugreek thoroughly. Pick only the leaves — discard the tough stems. Chop finely. If the leaves taste very bitter (older fenugreek tends to be bitter), sprinkle 1/2 tsp salt over the chopped leaves, mix and leave 5 minutes, then squeeze out the released salt water. This removes excess bitterness.

    Combine everything in one bowl: In a large bowl place wheat flour, chopped fenugreek leaves, yogurt, red chilli powder, turmeric, cumin seeds, sesame seeds, sugar, ginger paste and salt. Mix everything together with your hands until combined.

    Knead the dough: Work the mixture until a smooth, soft dough forms. The fenugreek leaves and yogurt together should provide enough moisture — add 1 to 2 tbsp warm water only if the dough is too dry to come together. The dough should be softer than regular chapati dough.

    Rest the dough: Cover with a damp cloth. Rest for 10 minutes — resting makes the dough easier to roll and improves the final texture.

    Divide into portions: Divide the rested dough into 10 to 12 equal balls.

    Roll each thepla thin: Lightly dust the rolling surface with flour. Roll one dough ball into a thin round disc — about 15 to 18 cm in diameter and 2 mm thick. Thepla should be noticeably thinner than paratha. Roll evenly so all parts cook at the same rate.

    Cook on a hot griddle: Heat a flat griddle on medium heat. Place the rolled thepla on it. Cook for 1.5 minutes until small bubbles form and light brown spots appear on the bottom. Flip.

    Add oil to both sides: Apply 1/2 tsp oil on the cooked surface. Flip again. Apply 1/2 tsp oil on the other side. Cook pressing gently with a spatula for 1 to 2 minutes until both sides have golden-brown spots and the thepla is fully cooked.

    Stack and keep: Place cooked thepla on a plate. Cover with a cloth to keep warm and soft. Repeat with remaining dough.

    Serve: Serve thepla with yogurt, a sweet raw mango chutney, or a mango pickle (aam ka achar). Thepla stays soft at room temperature for 2 to 3 days — making it the perfect travel food.

    Note: Thepla is the food that Gujaratis carry when they travel. On any Indian train with Gujarati passengers, the smell of thepla from tiffin boxes fills the compartment. It does not require refrigeration and stays fresh for days, making it ideal for long journeys. School children across Gujarat bring thepla in their tiffin boxes daily. The combination of thepla and mango pickle is the definitive Gujarati travel meal.
