Method

    Soak the tamarind: Break the dried tamarind into small pieces. Place in a bowl. Pour 1 cup hot water over it. Soak for 15 to 20 minutes until completely soft. Squeeze the tamarind pieces repeatedly with your fingers to extract all the pulp into the water.

    Strain the tamarind: Pour the soaked tamarind through a fine strainer into a pot, pressing the pulp firmly with the back of a spoon to extract all the liquid. Discard the seeds and fibre remaining in the strainer.

    Add jaggery to the tamarind water: Add the grated jaggery to the strained tamarind liquid in the pot. Stir.

    Heat and cook: Place the pot on medium heat. Stir as the jaggery melts. Once dissolved, bring to a gentle boil.

    Simmer to reduce: Cook on medium heat, stirring every 2 minutes, for 8 to 10 minutes until the chutney thickens to a flowing sauce consistency — it should coat the back of a spoon.

    Add the spices: Turn to low heat. Add ground roasted cumin, dry ginger powder, red chilli powder, black salt, regular salt and asafoetida. Stir well.

    Cook 2 more minutes: Cook on low heat for 2 more minutes so the spices bloom into the chutney.

    Taste and balance: Taste the chutney. It should be: sour (from tamarind), sweet (from jaggery), spiced (from cumin and ginger), with a slight heat and the complex flavour of black salt. Add more jaggery for sweetness or tamarind pulp for sourness if needed.

    Cool to room temperature: Remove from heat. Let cool completely. The chutney will thicken further as it cools.

    Store: Transfer to a clean glass jar. Store at room temperature for 1 week or refrigerated for up to 1 month.

The specific Himachali blend uses dry ginger powder prominently, which is considered warming for mountain climates. Variations exist across districts — the Kangra version is sweeter while the Kullu version is more sour.
