Method

    Wash the toor dal: Rinse 3 times.

    Add corn to the dal: Place toor dal and fresh corn kernels together in a pressure cooker. Add 3 cups water and turmeric.

    Pressure cook together: Cook on high until first whistle, then medium for 4 to 5 whistles. The corn cooks alongside the dal, releasing its starch and natural sweetness.

    Open and mash: Open after pressure releases. Mash the mixture — the dal will break down smoothly while some corn kernels remain whole and others partially break, releasing their starch to thicken the dal.

    The corn-thickened dal: The combination should be noticeably thicker and sweeter than plain toor dal.

    Make the tempering: Heat 2 tbsp oil. Add cumin seeds — crackle. Add asafoetida and dried red chilli.

    Add ginger: Add ginger paste. Cook 1 minute.

    Add red chilli powder: Turn low. Add red chilli powder. Stir 15 seconds.

    Combine: Pour the tempering into the corn-thickened dal. Add salt. Simmer 5 minutes.

    Serve: Scatter coriander. Serve with roti or rice. The corn dal is sweeter and thicker than regular dal.

    Note: The practice of adding fresh corn to toor dal is specific to the farming communities of eastern UP — the Gorakhpur, Basti and Maharajganj districts where corn (makka) is grown in the kharif (monsoon) season alongside rice and dal crops. The natural sweetness of fresh corn transforms the character of the toor dal in a way that dried corn or canned corn cannot replicate.
