Gulab Jamun
Soft milk-solid dumplings soaked in fragrant rose sugar syrup — India's most beloved sweet.
Roasted sesame seeds bound with jaggery syrup into crunchy fragrant balls — the traditional Makar Sankranti sweet of Chhattisgarh.
Dry-roast sesame seeds in a wide pan on medium heat stirring constantly for 4 to 5 minutes until golden and fragrant and they begin to pop.
Transfer to a plate immediately and cool.
In a heavy pan combine grated jaggery and 3 tbsp water.
Heat on medium stirring until jaggery dissolves completely.
Continue cooking without stirring until the syrup reaches a soft-to-hard ball stage — drop a small amount in cold water, it should form a firm ball when pressed. This takes 4 to 5 minutes.
Add cardamom powder. Stir.
Immediately add roasted sesame seeds to the syrup.
Stir quickly and thoroughly to coat every seed.
Work very fast — the mixture sets quickly.
Grease your palms with ghee. Take 2 tbsp of the hot mixture. Press and roll firmly into a round ball.
Continue shaping all the mixture while still warm and pliable.
If it hardens warm on lowest heat 30 seconds.
Cool completely until crunchy. Store in an airtight container for 3 to 4 weeks.
