Pure ingredients, pure flavour. The dish is sacred in some traditions, served at births, weddings and important spiritual ceremonies. It demonstrates the Arunachali principle that the finest ingredients need the simplest preparation.

    Understand glutinous rice: Use 2 cups of glutinous rice (also called sweet rice or sticky rice). The grains should look short, plump, and milky-white. Available at Northeast Indian groceries, Asian supermarkets, or specialty rice shops. Avoid regular long-grain rice — it does not produce sticky rice no matter how you cook it.
