Method

    Make the puri dough: Combine flour, oil and salt. Add water to form a medium-stiff dough — not too soft, not too hard. Knead 5 minutes. Rest 15 minutes.

    Make the aloo sabzi: Heat 2 tbsp oil. Add cumin seeds — crackle. Add asafoetida.

    Add ginger paste: Cook 30 seconds.

    Add tomato: Add finely chopped tomato. Cook 4 minutes until soft.

    Add spice powders: Turn low. Add red chilli powder, turmeric and coriander powder. Stir 2 minutes.

    Add the roughly broken potato: Add the boiled potato broken into rough chunks. Stir vigorously — the potato partially mashes into the masala.

    Add water and amchur: Add 1/2 cup water and amchur. Stir. The amchur adds the tangy, slightly sour note that distinguishes this dhaba-style aloo from restaurant versions. The sabzi should be thin, almost like a thin curry.

    Roll and fry puris: Divide puri dough into 12 balls. Roll each into a thin round about 12 cm. Heat oil in a kadai on medium-high. Fry each puri pressing gently with a slotted spoon until puffed. Fry 20 to 30 seconds per side.

    Drain and keep warm.

    Serve: Place 3 hot puris alongside a bowl of the thin aloo sabzi. Scatter coriander over the sabzi.
