Method

    Double marinate: Apply marinade 1 for 30 minutes. Apply marinade 2 for 3 more hours.

    Grill the chicken: Grill on a very hot pan or under a hot grill at 230°C until charred in patches and cooked through. Cut into medium pieces.

For the wedding-style version the tomato is cooked 5 minutes longer than usual — producing a deeper, sweeter sauce.

    Add red chilli powder: Stir 2 minutes.

    Add the grilled chicken: Add the charred chicken pieces. Stir.

    Add kasuri methi: Crush the dried fenugreek leaves between palms and add. The kasuri methi fragrance defines this preparation.
