Black-eye beans slow-cooked with mountain spices in a thin, tangy Pahadi curry — a sustaining daily protein dish of Uttarakhand households, particularly in the Kumaon region.
Ingredients
1 cup lobia (black-eye beans / cowpeas) — soaked overnight and drained
1 tomato — roughly chopped
1/2 tsp turmeric
2 tbsp mustard oil
1 tsp cumin seeds
4 garlic cloves — sliced
1 tsp ginger — grated
1 tsp coriander powder
1/2 tsp red chilli powder
1/4 tsp asafoetida
Salt to taste
1/2 tsp amchur (dried mango powder)
Fresh coriander to garnish
Method
Drain soaked lobia. Pressure cook with 3 cups fresh water, chopped tomato and turmeric for 4 to 5 whistles until completely tender.
