Thick sorghum flatbread hand-patted and cooked on a clay tawa — the foundational daily bread of Telangana's rural communities eaten with every meal.

Method

  1. Place jowar flour and salt in a bowl. Add hot water gradually mixing with a spoon then kneading with continuously wet hands.
  2. Knead for 3 to 4 minutes with wet hands — sorghum has no gluten so keep hands wet throughout.
  3. The dough should hold together without crumbling.
  4. Divide into 4 balls. Keep covered with a damp cloth.
  5. Wet both palms. Place one ball on a wet clay surface, banana leaf or damp cloth.
  6. Pat outward with wet palms into a thick round 15 cm wide and 7 to 8 mm thick.
  7. Heat a clay or iron tawa on medium. Invert the shaped roti onto the tawa.
  8. Cook 4 to 5 minutes. Flip carefully. Cook 3 to 4 minutes.
  9. Finish directly over a flame 30 seconds per side.
  10. Apply ghee or oil.
