Crispy fried rice flour rings flavoured with sesame and cumin — the festival snack of Telangana distributed at Sankranti and other celebrations.
Ingredients
- 2 cups rice flour
- 2 tbsp sesame seeds
- 1/2 tsp cumin seeds
- 1/4 tsp ajwain (carom seeds)
- 1/4 tsp red chilli powder
- 1/4 tsp asafoetida
- 2 tbsp oil for shortening
- 1/2 tsp salt
- Hot water — to knead a firm dough
- Oil for deep frying
Method
- Combine rice flour, sesame seeds, cumin, ajwain, red chilli powder, asafoetida and salt.
- Add 2 tbsp oil. Mix until crumbly.
- Add hot water gradually kneading with wet hands into a firm, smooth dough.
- Take a small portion. Roll into a thin rope 6 mm thick.
- Shape into a ring 8 cm in diameter. Join the ends firmly.
- Heat oil for deep frying on medium. Fry rings in batches on medium for 4 to 5 minutes turning until completely golden and crispy throughout.
- Drain and cool completely.
