Kerala-style thoran — dry stir-fry of raw banana (pachakaya) with fresh coconut in coconut oil.
Ingredients
- - 300g raw banana (pachakaya)
- - 2 tbsp coconut oil
- - 1 tsp mustard seeds
- - 2 dried red chillies
- - 1 sprig curry leaves
- - 1/2 cup fresh grated coconut
- - 2 green chillies
- - 1/4 tsp turmeric
- - Salt to taste
Method
- Prepare raw banana: Peel 2 raw green plantains. Cut into thin rounds and soak immediately in water.
- Make coconut mixture: Mix half cup freshly grated coconut with half tsp turmeric, 1 tsp cumin, 2 green chillies and 3 shallots sliced.
- Parboil banana: Drain banana rounds. Parboil in salted water with a pinch of turmeric for 5 minutes until just tender. Drain.
- Combine: Mix parboiled banana rounds with the coconut mixture.
- Heat coconut oil: Heat 2 tbsp coconut oil in a wide pan.
- Splutter mustard seeds and fry aromatics: Add 1 tsp mustard seeds. When they pop add 2 dried red chillies and curry leaves.
- Add banana-coconut mixture: Add the combined mixture. Season with salt.
- Cover and cook: Cover tightly and cook on low heat 6-8 minutes.
- Toss: Open and toss on high heat 1-2 minutes.
- Serve: Raw banana thoran has a pleasant starchy quality. Serve with rice and Kerala curry.
