Kerala-style thoran — dry stir-fry of raw banana (pachakaya) with fresh coconut in coconut oil.

  1. Prepare raw banana: Peel 2 raw green plantains. Cut into thin rounds and soak immediately in water.
  2. Make coconut mixture: Mix half cup freshly grated coconut with half tsp turmeric, 1 tsp cumin, 2 green chillies and 3 shallots sliced.
  3. Parboil banana: Drain banana rounds. Parboil in salted water with a pinch of turmeric for 5 minutes until just tender. Drain.
  4. Combine: Mix parboiled banana rounds with the coconut mixture.
  5. Heat coconut oil: Heat 2 tbsp coconut oil in a wide pan.
  6. Splutter mustard seeds and fry aromatics: Add 1 tsp mustard seeds. When they pop add 2 dried red chillies and curry leaves.
  7. Add banana-coconut mixture: Add the combined mixture. Season with salt.
  8. Cover and cook: Cover tightly and cook on low heat 6-8 minutes.
  9. Toss: Open and toss on high heat 1-2 minutes.
  10. Serve: Raw banana thoran has a pleasant starchy quality. Serve with rice and Kerala curry.
