Deep-fried flaky pastry stuffed with sweetened khoya and dry fruits, soaked in sugar syrup — the indulgent Rajasthani sweet pastry from Jodhpur.

  1. Make filling: combine lightly roasted khoya with powdered sugar, cashews, almonds, raisins and cardamom.
  2. Mix thoroughly. Divide into 16 portions.
  3. Make pastry: rub ghee into maida until crumbly.
  4. Knead with water into a firm smooth dough. Rest 15 minutes.
  5. Divide into 16 balls. Roll each into a round 8 cm wide.
  6. Place one filling portion in centre. Bring edges up and seal completely. Reshape into a smooth ball.
  7. Flatten gently.
  8. Fry on medium-low for 6 to 8 minutes turning regularly until deep golden and completely cooked.
  9. The slow frying creates flakiness.
  10. Drain. Immediately dip in warm one-string sugar syrup for 30 seconds.
  11. Drain on a rack. The syrup dries to a gloss.
