Thin yogurt churned with water, cumin, black salt and fresh herbs — the Rajasthani cooling drink essential for surviving the desert summer heat.
Ingredients
- 1 cup full-fat yogurt
- 2.5 cups cold water
- 1/4 tsp roasted cumin powder
- 1/4 tsp black salt (kala namak)
- 1/4 tsp regular salt
- A few fresh mint leaves — finely torn
- 1/4 tsp dried mint (optional)
- 1 green chilli — very finely chopped (optional)
- Ice cubes
Method
- Combine yogurt and cold water in a tall container.
- Churn vigorously using a hand churner (mathni) for 2 minutes until completely frothy and combined. Or blend 1 minute.
- Add roasted cumin powder, black salt, regular salt, fresh mint leaves, dried mint and green chilli if using.
- Churn or blend briefly again.
- Taste — Rajasthani chaach should be thin, noticeably salty from both regular and black salt, flavoured with cumin and cooling from mint.
- Add ice cubes. Stir.
- Serve immediately.
