Thin yogurt churned with water, cumin, black salt and fresh herbs — the Rajasthani cooling drink essential for surviving the desert summer heat.

Method

  1. Combine yogurt and cold water in a tall container.
  2. Churn vigorously using a hand churner (mathni) for 2 minutes until completely frothy and combined. Or blend 1 minute.
  3. Add roasted cumin powder, black salt, regular salt, fresh mint leaves, dried mint and green chilli if using.
  4. Churn or blend briefly again.
  5. Taste — Rajasthani chaach should be thin, noticeably salty from both regular and black salt, flavoured with cumin and cooling from mint.
  6. Add ice cubes. Stir.
  7. Serve immediately.
