Classic Tamil Nadu Pattani Sadam — green peas and mint paste flavoured rice for lunchbox, festivals and everyday meals.
Ingredients
- - 2 cups raw rice
- - green peas and mint paste (as required)
- - 3 tbsp sesame oil
- - 1 tsp mustard seeds
- - 1/2 tsp urad dal
- - 2 dried red chillies
- - 1 sprig curry leaves
- - 3 tbsp raw peanuts
- - Salt to taste
Method
- Cook and cool rice: Cook 2 cups basmati rice for separate grains. Cool slightly.
- Cook green peas: Boil half cup green peas with a pinch of salt until just tender. Drain.
- Make mint paste: Blend 1 cup fresh mint leaves, half cup coriander, 3 green chillies and 4 garlic cloves to a smooth paste.
- Heat ghee: Heat 3 tbsp ghee. Add 1 bay leaf, 3 cloves and 2 cardamoms. Fry 30 seconds.
- Fry onions: Add 1 sliced onion and fry on medium heat 8 minutes until golden.
- Add mint paste: Add the mint-coriander paste. Fry on medium heat 6-8 minutes until raw smell disappears.
- Add cooked peas: Add drained peas and salt. Mix well and cook 2 minutes.
- Add rice: Add cooked rice. Fold gently with a flat spatula.
- Mix evenly: Fold until rice is coated with the green mint masala and peas are distributed throughout.
- Serve: Garnish with fried onion and mint. Serve with raita and papad.
