Dry puffed rice served alongside a fiery mutton curry — the iconic Odia combination where the dry crunchy mudhi and spiced mutton gravy are eaten together.
Ingredients
For the mutton curry:
600g bone-in mutton
1 large onion — finely chopped
2 tomatoes — finely chopped
1 tbsp ginger-garlic paste
3 tbsp oil
1/2 tsp panch phoron
1/2 tsp turmeric
1.5 tsp coriander powder
1 tsp red chilli powder
1 tsp garam masala
Salt
1/4 cup water
For serving:
3 cups puffed rice (muri / mudhi) — plain unsalted
Method
Heat 3 tbsp oil. Add panch phoron — sizzle.
Add finely chopped onion. Cook 12 minutes until very golden.
Add ginger-garlic paste. Cook 3 minutes. Add tomatoes.
Cook 8 minutes until oil separates.
Add turmeric, coriander powder, red chilli powder and salt. Cook 3 minutes.
Add mutton pieces. Brown on all surfaces for 8 minutes.
Add 1/4 cup water. Bring to a boil. Cover and simmer on medium-low for 45 to 55 minutes until mutton is completely tender.
Add garam masala. The mutton curry should be moderately dry — not a watery gravy.
Serve the mutton curry alongside a mound of plain puffed rice.
To eat: mix them together or eat the mutton alongside bites of puffed rice.
