Dry puffed rice served alongside a fiery mutton curry — the iconic Odia combination where the dry crunchy mudhi and spiced mutton gravy are eaten together.

  1. Heat 3 tbsp oil. Add panch phoron — sizzle.
  2. Add finely chopped onion. Cook 12 minutes until very golden.
  3. Add ginger-garlic paste. Cook 3 minutes. Add tomatoes.
  4. Cook 8 minutes until oil separates.
  5. Add turmeric, coriander powder, red chilli powder and salt. Cook 3 minutes.
  6. Add mutton pieces. Brown on all surfaces for 8 minutes.
  7. Add 1/4 cup water. Bring to a boil. Cover and simmer on medium-low for 45 to 55 minutes until mutton is completely tender.
  8. Add garam masala. The mutton curry should be moderately dry — not a watery gravy.
  9. Serve the mutton curry alongside a mound of plain puffed rice.
  10. To eat: mix them together or eat the mutton alongside bites of puffed rice.
