Pork skin deep-fried until puffed and completely crispy — the Naga whole-animal preparation that uses every part of the pig including the skin.
Ingredients
- 400g pork skin (rind) — cleaned and cut into 5 cm strips
- 1/4 tsp turmeric
- Salt
- Oil for deep frying — or lard for the traditional preparation
Method
- Clean pork skin thoroughly. Remove any remaining hair by scraping or burning over a flame. Wash.
- Boil pork skin in salted water for 15 minutes until cooked through but not yet tender. Drain.
- Cool and cut into 5 cm x 2 cm strips. Toss with turmeric and salt.
- Spread on a tray. Air-dry for 2 to 3 hours until the surface moisture is completely gone.
- Heat oil for deep frying on medium-high.
- Fry pork skin strips in batches on medium-high for 3 to 4 minutes until they puff dramatically and become completely crispy.
- Drain on paper towels.
- Season with extra salt.
- Serve immediately as a snack alongside akhuni chutney.
