Pork skin deep-fried until puffed and completely crispy — the Naga whole-animal preparation that uses every part of the pig including the skin.

  1. Clean pork skin thoroughly. Remove any remaining hair by scraping or burning over a flame. Wash.
  2. Boil pork skin in salted water for 15 minutes until cooked through but not yet tender. Drain.
  3. Cool and cut into 5 cm x 2 cm strips. Toss with turmeric and salt.
  4. Spread on a tray. Air-dry for 2 to 3 hours until the surface moisture is completely gone.
  5. Heat oil for deep frying on medium-high.
  6. Fry pork skin strips in batches on medium-high for 3 to 4 minutes until they puff dramatically and become completely crispy.
  7. Drain on paper towels.
  8. Season with extra salt.
  9. Serve immediately as a snack alongside akhuni chutney.
