Eggs wrapped in colocasia or taro leaves and cooked over a fire — the simple Naga preparation of eggs with available foraged leaves.

  1. Wash taro leaves. Select large flat leaves.
  2. Briefly pass over a gas flame for 2 seconds per side to soften without cooking.
  3. Beat eggs with finely chopped green chilli, spring onion, salt and Naga chilli powder if using.
  4. Place one leaf on a flat surface. Pour 1/4 of the egg mixture into the centre of the leaf.
  5. Fold the leaf over the eggs to form a parcel, tucking in the sides.
  6. Cook the leaf parcel on a flat pan on medium heat for 3 to 4 minutes per side until the egg inside is completely set.
  7. The leaf will char slightly on the outside — this is correct.
  8. Open the leaf at the table. The egg inside takes on the subtle earthy flavour of the taro leaf.
