Pieces of smoked pork stir-fried with seasonal vegetables — the Mizo preparation that uses smoked pork as a seasoning agent to elevate simple vegetables.
Ingredients
150g vawksa rep (smoked pork) — thinly sliced or cut into small pieces
3 cups mixed vegetables — cabbage, flat beans, pumpkin, spring onion — cut uniform size
3 garlic cloves — thinly sliced
2 green chillies — finely sliced
1 tsp ginger — grated
1 tbsp oil
1/4 tsp turmeric
Salt to taste — add very sparingly as smoked pork is already salty
Fresh spring onion to garnish
Method
Heat 1 tbsp oil in a wide pan or wok on medium-high.
Add thinly sliced garlic — fry 30 seconds until golden.
Add ginger and sliced green chillies. Stir 30 seconds.
Add the sliced smoked pork pieces. Stir-fry on high heat for 2 minutes — the smoked pork releases its fat and smoky aroma into the oil.
Add harder vegetables first (flat beans, pumpkin).
Add turmeric. Toss on high heat 3 minutes.
Add remaining vegetables (cabbage, spring onion).
Toss on high heat 3 to 4 minutes until all vegetables are cooked through with slight crunch.
Taste before adding salt — the smoked pork provides significant saltiness.
Garnish with fresh spring onion. Serve with steamed rice.
