Crushed instant noodles tossed raw with fresh vegetables, chilli and local seasoning — the most popular street snack of Aizawl eaten straight from the packet in a uniquely Mizo way.
Ingredients
1 packet Wai Wai noodles (the Nepali instant noodles widely available throughout Northeast India — Mizo people eat these extensively; use any instant noodle without cooking)
1/4 cup finely shredded raw cabbage
2 tbsp spring onion — finely sliced
1 fresh green chilli — very finely sliced
1 tbsp fresh coriander — chopped
1 tbsp peanuts — roasted (optional)
The seasoning sachet from the packet
1 tsp lemon juice
Method
Open the packet of Wai Wai noodles. Crush the noodles while still in the packet by squeezing firmly — the noodles should break into small, bite-sized irregular pieces.
Open the packet and pour the crushed noodles into a bowl.
Add the seasoning sachet from the packet. Toss to coat the noodle pieces.
Add finely shredded cabbage, sliced spring onion, sliced fresh green chilli and fresh coriander.
Add roasted peanuts if using.
Add lemon juice. Toss everything together.
Eat immediately — the noodles are eaten completely raw and crunchy, not cooked.
