Rice cooked in rendered pork fat with dried chilli — the simple, sustaining one-pot meal of the Tangkul Naga people of the Manipur hills.

  1. Place the small pork fat pieces in a heavy pot over medium-low heat.
  2. Render slowly for 6 to 8 minutes until most of the fat has melted and the fat pieces are golden and slightly crispy.
  3. Add crushed garlic. Fry in the rendered fat 1 minute.
  4. Add dried red chillies. Fry 30 seconds.
  5. Add washed rice. Toss in the pork fat 2 minutes to coat each grain.
  6. Add 3.5 cups water and salt. Bring to a boil. Stir once.
  7. Reduce to the lowest heat. Cover tightly. Cook 18 to 20 minutes.
  8. Turn off heat. Rest covered 5 minutes.
  9. Fluff gently. Serve as a complete one-pot meal with any chutney or pickle.
