Wheat or rice noodles stir-fried with egg, vegetables and soy sauce in the popular Meitei street food style eaten throughout Imphal.
Ingredients
- 150g flat wheat noodles or rice noodles — cooked al dente and cooled
- 2 eggs — beaten
- 1 small onion — thinly sliced
- 1/2 cup cabbage — finely shredded
- 2 spring onions — cut into 3 cm lengths
- 3 garlic cloves — thinly sliced
- 1 tbsp soy sauce
- 1 tsp fish sauce or 1 piece ngari dissolved in 1 tbsp water
- 1/2 tsp black pepper
- 1 tbsp oil
- Fresh spring onion and coriander to garnish
Method
- Cook noodles according to package instructions until just al dente. Drain and toss with a few drops of oil to prevent sticking. Cool.
- Heat 1 tbsp oil in a wok or wide pan on high heat.
- Add thinly sliced garlic. Fry 30 seconds.
- Add thinly sliced onion. Toss on high heat 1 minute.
- Add shredded cabbage. Toss 1 minute.
- Push vegetables to the side. Add beaten eggs in the centre. Scramble briefly then mix with the vegetables.
- Add the cooked noodles. Toss everything together on high heat.
- Add soy sauce, fish sauce or dissolved ngari and black pepper. Toss vigorously for 2 minutes on high heat.
- Add spring onion pieces in the last 30 seconds.
- Garnish with spring onion and coriander. Serve immediately.
