Sprouted legumes in a spiced masala curry served with pav rolls — the street food version of usal that is Mumbai's working-class breakfast.
Ingredients
- 1.5 cups mixed sprouted legumes (matki/moth bean, mung, dried peas — sprouted 1 day)
- 1 medium onion — finely chopped
- 2 tomatoes — finely chopped
- 1 tbsp ginger-garlic paste
- 2 tbsp oil
- 1 tsp mustard seeds
- 8 curry leaves
- 1/4 tsp asafoetida
- 1 tsp kala masala or goda masala
- 1 tsp red chilli powder
- 1/2 tsp turmeric
- 1/4 cup water
- Salt
- For serving: pav rolls, raw onion, coriander, lemon, farsan
Method
- Heat 2 tbsp oil. Add mustard seeds — pop.
- Add asafoetida and curry leaves. Add onion.
- Cook 7 minutes until golden. Add ginger-garlic paste. Cook 2 minutes. Add tomatoes. Cook 6 minutes.
- Add kala masala, red chilli powder and turmeric. Cook 2 minutes.
- Add sprouted legumes and 1/4 cup water. Cover and cook on medium for 10 to 12 minutes until sprouts are tender but retain slight bite.
- Season with salt.
- Serve in a bowl topped with raw chopped onion, coriander, farsan and lemon squeeze. Accompany with warm pav rolls.
