Whole black gram and rice cooked together into a thick, dense khichdi — the winter sustenance meal of rural Madhya Pradesh.

  1. Drain soaked black urad dal.
  2. Heat 2 tbsp ghee in a pressure cooker or heavy pot.
  3. Add cumin — sizzle. Add crushed garlic and whole green chilli. Fry 30 seconds.
  4. Add soaked black urad dal. Add washed rice and turmeric.
  5. Add 4 cups water and salt. Bring to a boil.
  6. Pressure cooker: cook for 5 to 6 whistles. Rest 10 minutes before opening.
  7. Open pot: cover and simmer on medium-low for 40 to 45 minutes stirring every 10 minutes until both dal and rice are completely soft and merged.
  8. Black urad takes longer than moong.
  9. Mash lightly. Add extra ghee. Season with salt.
  10. Serve topped with generous ghee alongside raw chopped onion, green chilli and lemon.
