Whole black gram and rice cooked together into a thick, dense khichdi — the winter sustenance meal of rural Madhya Pradesh.
Ingredients
- 3/4 cup whole black urad dal (with skin) — soaked overnight
- 1 cup rice
- 2 tbsp ghee
- 1 tsp cumin seeds
- 4 garlic cloves — crushed
- 1 green chilli — whole
- 1/4 tsp turmeric
- 4 cups water
- Salt
- For serving: extra ghee, raw chopped onion, green chilli, lemon
Method
- Drain soaked black urad dal.
- Heat 2 tbsp ghee in a pressure cooker or heavy pot.
- Add cumin — sizzle. Add crushed garlic and whole green chilli. Fry 30 seconds.
- Add soaked black urad dal. Add washed rice and turmeric.
- Add 4 cups water and salt. Bring to a boil.
- Pressure cooker: cook for 5 to 6 whistles. Rest 10 minutes before opening.
- Open pot: cover and simmer on medium-low for 40 to 45 minutes stirring every 10 minutes until both dal and rice are completely soft and merged.
- Black urad takes longer than moong.
- Mash lightly. Add extra ghee. Season with salt.
- Serve topped with generous ghee alongside raw chopped onion, green chilli and lemon.
