Potato and okra cooked dry together with spices and amchur — the classic vegetable combination of Madhya Pradesh.
Ingredients
3 medium potatoes — peeled and cut into 2 cm cubes
300g fresh okra (bhindi) — washed, completely dried and cut into 2 cm pieces
1 medium onion — finely chopped
2 tbsp oil
1 tsp cumin seeds
1/4 tsp asafoetida
1/2 tsp turmeric
1 tsp coriander powder
1/2 tsp red chilli powder
1/2 tsp amchur
Salt

Method
Dry the okra completely before cutting to prevent sliminess.
Heat 2 tbsp oil in a wide pan on medium-high.
Add cumin — sizzle. Add asafoetida.
Add finely chopped onion. Cook on medium for 5 minutes.
Add potato cubes. Add turmeric and coriander powder.
Toss to coat. Cook on medium for 6 minutes stirring occasionally until potatoes are halfway cooked.
Add the okra. Do not cover. Cook on medium-high stirring every 2 minutes for 8 to 10 minutes until both potato and okra are fully cooked and the okra sliminess is gone.
