Sattu stirred into cold water with lemon, salt and cumin — the most popular summer cooling drink of Jharkhand and Bihar, filling and refreshing.
Ingredients
3 tbsp sattu (roasted gram flour — available at Indian stores)
1.5 cups cold water
1 tbsp lemon juice
1/4 tsp roasted cumin powder
1/4 tsp black salt (kala namak)
Regular salt to taste
1 tsp sugar — optional
Fresh mint to garnish
Ice cubes
Method
Place sattu in a glass. Add 2 tbsp cold water first and stir until the sattu dissolves into a smooth paste without lumps.
Gradually add remaining cold water while stirring continuously.
Add lemon juice, roasted cumin powder, black salt, regular salt and sugar if using. Stir well.
Taste — should be pleasantly savoury-sour with an earthy note from roasted gram. Adjust lemon and salt.
Add ice cubes. Garnish with mint.
Pour into glasses or cups. For hot drinks, warm the cup first by rinsing with hot water. For cold drinks, add ice just before serving. Serve immediately.
