Whole wheat paratha stuffed with spiced sattu flavoured with mustard oil and ajwain — the most protein-dense breakfast flatbread of Jharkhand.

Method

  1. Make dough: combine atta and salt. Add water and knead 8 to 10 minutes into a smooth soft dough. Cover. Rest 20 minutes.
  2. Make filling: combine sattu, ajwain, finely chopped green chillies, red chilli powder, mustard oil, lemon juice, kalonji and coriander.
  3. Add 2 to 3 tbsp water to bring to a moist crumbly paste. Season with salt.
  4. Divide dough into 8 balls. Flatten one ball into an 8 cm circle.
  5. Place 2 tbsp filling in centre. Bring edges up and seal completely.
  6. Gently flatten. Roll out carefully to 15 cm.
  7. Heat a tawa on medium. Cook the paratha 2 to 3 minutes until golden spots appear.
  8. Flip. Apply ghee. Cook 2 minutes. Flip again.
  9. Apply ghee on second side. Cook 1 minute.
  10. Serve hot with yogurt and pickle.
