Whole wheat paratha stuffed with spiced sattu flavoured with mustard oil and ajwain — the most protein-dense breakfast flatbread of Jharkhand.
Ingredients
- For dough:
- 2 cups whole wheat flour (atta)
- 1/2 tsp salt
- Water to knead a soft dough
- For sattu filling:
- 3/4 cup sattu (roasted gram flour)
- 1/2 tsp ajwain
- 2 green chillies — finely chopped
- 1/4 tsp red chilli powder
- 1 tbsp mustard oil
- 1 tbsp lemon juice
- 2 tbsp fresh coriander
- 1/4 tsp kalonji (nigella seeds)
- Salt to taste
- 2 to 3 tbsp water to bind
- Ghee or butter for cooking
Method
- Make dough: combine atta and salt. Add water and knead 8 to 10 minutes into a smooth soft dough. Cover. Rest 20 minutes.
- Make filling: combine sattu, ajwain, finely chopped green chillies, red chilli powder, mustard oil, lemon juice, kalonji and coriander.
- Add 2 to 3 tbsp water to bring to a moist crumbly paste. Season with salt.
- Divide dough into 8 balls. Flatten one ball into an 8 cm circle.
- Place 2 tbsp filling in centre. Bring edges up and seal completely.
- Gently flatten. Roll out carefully to 15 cm.
- Heat a tawa on medium. Cook the paratha 2 to 3 minutes until golden spots appear.
- Flip. Apply ghee. Cook 2 minutes. Flip again.
- Apply ghee on second side. Cook 1 minute.
- Serve hot with yogurt and pickle.
