Mutton cooked in a straightforward Dogra masala with onion, tomato and whole spices — the everyday non-vegetarian preparation of Jammu households.
Ingredients
- 700g bone-in mutton
- 2 large onions — finely chopped
- 3 tomatoes — finely chopped
- 1 tbsp ginger-garlic paste
- 3 tbsp oil
- 1 tsp cumin seeds
- 2 bay leaves
- 4 black peppercorns
- 1/2 tsp turmeric
- 1.5 tsp coriander powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- Salt
- Fresh coriander
Method
- Heat 3 tbsp oil in a heavy pot. Add cumin, bay leaves and peppercorns — fry 20 seconds.
- Add finely chopped onion. Cook 15 minutes until very deep golden-brown.
- Add ginger-garlic paste. Cook 3 minutes. Add chopped tomatoes.
- Cook 10 to 12 minutes until oil separates.
- Add turmeric, coriander powder and red chilli powder. Cook 3 minutes.
- Add mutton. Brown all surfaces on medium-high for 8 minutes.
- Add 1 cup water. Bring to a boil. Cover and simmer on medium-low for 45 to 55 minutes until completely tender.
- Add garam masala and salt. Simmer 5 minutes.
- Garnish with coriander. Serve with roti or rice.
