Kerala-style thoran — dry stir-fry of tender raw jackfruit with fresh coconut in coconut oil.

  1. Prepare raw jackfruit: Use 300g canned young green jackfruit or fresh raw jackfruit. If using fresh, oil your hands and knife. Cut into small pieces.
  2. Parboil: Boil jackfruit pieces in salted water with half tsp turmeric for 15 minutes until completely tender. Drain. Shred slightly with fingers.
  3. Make coconut mixture: Mix half cup freshly grated coconut with half tsp turmeric, 1 tsp cumin, 2 green chillies and 3 shallots.
  4. Heat coconut oil: Heat 2 tbsp coconut oil in a wide pan.
  5. Splutter mustard seeds: Add 1 tsp mustard seeds and cover until all pop.
  6. Add aromatics: Add 2 dried red chillies and curry leaves. Fry 20 seconds.
  7. Add jackfruit: Add cooked jackfruit. Season with salt.
  8. Fry: Toss on medium-high heat 4-5 minutes until jackfruit gets slightly golden edges.
  9. Add coconut mixture: Add coconut mixture. Toss well 2 minutes.
  10. Serve: Jackfruit thoran has a meaty texture. Serve with steamed rice.
