Sesame seeds bound in hard jaggery toffee into crunchy brittle bars — the winter sweet of Himachal Pradesh sold at mountain fairs and during Lohri.

Method

  1. Dry-roast sesame seeds in a wide pan on medium, stirring constantly, for 4 minutes until golden and starting to pop.
  2. Transfer immediately to a plate. Cool.
  3. Grease a flat surface (marble slab, steel tray or silicone mat) and the back of a flat spoon with ghee.
  4. In a heavy pan combine grated jaggery and 2 tbsp water.
  5. Heat on medium, stirring, until jaggery dissolves. Increase to medium-high. Cook without stirring until the syrup reaches hard crack stage — drop a small amount in cold water, it should instantly harden to a brittle thread.
  6. Immediately add roasted sesame seeds. Stir fast and thoroughly.
  7. Pour immediately onto the greased surface.
  8. Using the greased back of a spoon press and spread quickly to 5 mm thickness.
  9. Before it hardens completely cut into rectangular bars or diamond shapes using a greased knife.
  10. Cool completely until brittle and crunchy.
